Ingredients
  

  • 12 oz 340 g silken tofu soft or firm silken variety, drained
  • 1 cup 170 g dark or semi-sweet vegan chocolate chips
  • 2-3 tbsp Maple syrup or agave syrup adjust to taste
  • 1 tsp Pure vanilla extract
  • Sea salt A pinch of
Optional toppings
  • coconut whipped cream shaved chocolate, berries, or crushed nuts

Equipment

  • Blender or food processor
  • Heatproof bowl
  • Small saucepan (for melting chocolate)
  • Spatula
  • Serving cups or ramekins

Method
 

Melt the chocolate:
  1. In a heatproof bowl set over a pot of simmering water (double boiler style), melt the chocolate chips until smooth. Alternatively, microwave in 20-second bursts, stirring in between, until fully melted.
Blend the mousse base:
  1. In a blender or food processor, combine the drained silken tofu, maple syrup, vanilla extract, and sea salt. Blend until silky smooth.
Incorporate the chocolate:
  1. Pour the melted chocolate into the blender and blend again until fully combined and creamy. Scrape down the sides as needed.
Adjust sweetness:
  1. Taste and add an extra tablespoon of maple syrup if you prefer it sweeter. Blend again briefly.
Chill:
  1. Spoon the mousse into serving cups or ramekins. Refrigerate for at least 1–2 hours to set and chill.
Serve:
  1. Top with coconut whipped cream, berries, or a sprinkle of shaved chocolate for a finishing touch.
