Tofu steak gives you basically all the health benefit you could potentially get from real steak but without any of the downsides.

While tofu by itself is considered bland by a lot of people, the magic of tofu steaks comes from the marinade and the cooking technique. That cooking technique that turns your everyday tofu into the most perfect vegan steak, is what I would be sharing with you in this article. But before you think about adding flavor to you tofu, there’s a small but important step you shouldn’t skip: pressing the tofu. Tofu holds a lot of water straight out of the package, and if you cook it as-is without removing that moisture, you’re more likely to end up with a soggy texture.

Once you’ve pressed your tofu, cut it into thick slabs, think steak size, and lay them flat in your favorite marinade. A classic blend might include soy sauce or tamari for saltiness, maple syrup or agave for a hint of sweetness, and garlic, smoked paprika, and black pepper to build depth and aroma. Letting the tofu sit in this mixture for at least 30 minutes (or even overnight in the fridge) makes a big difference in taste, as the flavors have time to infuse into every bite.

Ingredients
  

  • 14 oz 400 g extra-firm tofu
  • 2 tbsp soy sauce or tamari
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp maple syrup or agave
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp dried thyme or rosemary
  • Optional: ½ tsp chili flakes for heat

Instructions
 

Press the tofu:

  • Remove the tofu from its package and drain excess liquid. Press it using a tofu press or place it between paper towels with a heavy object on top for at least 10 minutes. This step is important as it helps the tofu absorb more flavor and achieve a firmer, steak-like texture when cooked.

Slice the tofu into steaks:

  • Once pressed, slice the tofu lengthwise into 2 to 3 thick slabs (about ¾-inch thick). These will be your tofu steaks. Handle gently to avoid breaking them.

Prepare the marinade:

  • In a mixing bowl, combine soy sauce, olive oil, balsamic vinegar, maple syrup, minced garlic, smoked paprika, black pepper, onion powder, and dried herbs. Whisk well until fully blended.

Marinate the tofu:

  • Place the tofu steaks into the marinade and gently coat each side. Let them marinate for at least 10 minutes, flipping once halfway through. For deeper flavor, you can marinate for up to 30 minutes.

Cook the tofu steaks:

  • Heat a skillet over medium heat. Add a small amount of oil if needed. Place the marinated tofu steaks into the hot pan and cook for 5 to 7 minutes per side. Avoid moving them too much so a golden crust can form.

Caramelize and finish:

  • As the tofu cooks, spoon extra marinade over the steaks. This helps create a rich, slightly caramelized surface. Flip carefully and repeat on the other side until both sides are browned and slightly crisp.

Rest and serve:

  • Remove the tofu steaks from the pan and let them rest for 2 minutes before serving. This allows the flavors to settle and improves texture.
