Ingredients
  

  • 2 tbsp olive oil
  • 1 medium yellow onion chopped
  • 6 cloves garlic minced
  • 2 cans 15 oz each chickpeas, drained and rinsed
  • 4 cups low-sodium vegetable broth
  • 1 cup unsweetened coconut milk or any vegan milk
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • ½ lemon juice
  • Fresh parsley or cilantro chopped (for garnish)
Optional
  • a pinch of red pepper flakes for heat

Equipment

  • Large soup pot or Dutch oven
  • Wooden spoon
  • Blender or immersion blender

Method
 

Saute aromatics:
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for about 5 minutes until translucent. Stir in minced garlic and cook for another minute until fragrant.
Add chickpeas and spices:
