I made this vegan recipe to be simple to follow so you can have your crunchy crispy roasted chickpeas to snack on.

Equipment

  • Baking sheet
  • Parchment paper this is optional
  • Mixing bowl
  • Clean kitchen towel or paper towels
  • Measuring spoons

Ingredients
  

  • 2 cans 15 oz each chickpeas (garbanzo beans) drained and rinsed
  • 1½ tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon black pepper
  • ½ teaspoon salt adjust to taste
  • cayenne pepper or chili powder for heat this is optional

Instructions
 

Preheat oven:

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper if desired.

Dry the chickpeas:

  • Dry the chickpeas thoroughly using a kitchen towel or paper towels. Removing excess moisture helps them get extra crispy.

Season:

  • Transfer chickpeas to a mixing bowl. Add olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Toss until evenly coated.

Roast:

  • Spread chickpeas in a single layer on the baking sheet.

Bake:

  • Bake for 30 to 35 minutes, shaking the pan halfway through, until golden and crispy.

Cool:

  • Cool slightly before serving, they crisp up more as they cool.
