Homemade Creamy Vegan Queso Recipe

Everything is made in the blender and then you finish on the stove, which means you get that smooth, velvety texture that feels like the real non-vegan queso. Your cashews blend up into a rich base, while nutritional yeast make sit have that cheesy flavor that you’re likely familiar with.
As you can tell, a good vegan queso is not just cashews else it won’t be as great, but there are seasoning that make everything feel and taste so good you’d want to keep dipping your fries and chips in it.

Homemade Creamy Vegan Queso Recipe
Equipment
- High-speed blender
- Medium saucepan
- Measuring cups and spoons
- Spoon or silicone spatula
Ingredients
- 1 cup raw cashews this should be soaked in hot water for 10 minutes, then drained
- ¾ cup unsweetened vegan milk almond, soy, or oat milk
- ¼ cup nutritional yeast
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- 1 teaspoon chili powder adjust to taste
- ½ teaspoon salt or to taste
- ¼ teaspoon turmeric for color and this is optional
- 1 small jalapeño seeded (optional, for heat)
Instructions
Blend the base
- Add the soaked cashews, plant milk, nutritional yeast, olive oil, lemon juice, apple cider vinegar, and all spices to a high-speed blender. Blend until completely smooth and creamy.
Cook the queso
- Pour the blended mixture into a saucepan over medium heat. Stir constantly for 5 to 7 minutes until the queso thickens and becomes silky.
Adjust seasoning
- Taste and adjust salt, spice level, or thickness (add a splash of plant milk if needed).
Serve warm
- Remove from heat and serve immediately.
