Homemade Creamy Vegan Queso Recipe

Ingredients
  

  • 1 cup raw cashews this should be soaked in hot water for 10 minutes, then drained
  • ¾ cup unsweetened vegan milk almond, soy, or oat milk
  • ¼ cup nutritional yeast
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 1 teaspoon chili powder adjust to taste
  • ½ teaspoon salt or to taste
  • ¼ teaspoon turmeric for color and this is optional
  • 1 small jalapeño seeded (optional, for heat)

Instructions
 

Blend the base

  • Add the soaked cashews, plant milk, nutritional yeast, olive oil, lemon juice, apple cider vinegar, and all spices to a high-speed blender. Blend until completely smooth and creamy.

Cook the queso

  • Pour the blended mixture into a saucepan over medium heat. Stir constantly for 5 to 7 minutes until the queso thickens and becomes silky.

Adjust seasoning

  • Taste and adjust salt, spice level, or thickness (add a splash of plant milk if needed).

Serve warm

  • Remove from heat and serve immediately.
