For the tofu:
  • 1 200 g (about 7 oz ) extra-firm tofu, pressed and sliced into ½-inch slabs
  • 1 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp olive oil
  • 1 tsp maple syrup
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • Pinch of black pepper
For the sandwich:
  • 4 slices whole-grain or sourdough bread toasted
  • 2 tbsp vegan mayo or hummus
  • 1 tsp Dijon mustard
  • 1 small avocado sliced
  • ½ cup baby spinach or lettuce
  • 1 medium tomato sliced
  • ¼ small red onion thinly sliced

Method
 

Press the tofu:
  1. Wrap the tofu in paper towels and place a heavy object on top for about 10–15 minutes to remove excess moisture.
Marinate:

  2. Add the tofu slices and let them marinate for 10 minutes (or longer for more flavor).
