However, if you love sausages just like I do, you’d know it’s hard to stay away. And that’s why I have this vegan sausage recipe. This recipe gives you a very good alternative to sausages as a vegan, and it tastes great in its own right. With the right blend of ingredients and steps, this vegan sausage is a perfect alternative even for non-vegans.

This vegan sausage recipe is kinda unconventional, but it gets the work done. The vegan sausage comes out with a slightly crispy body and soft, yummy, and deeply flavored insides. The recipe is also meat-free, dairy-free, gluten-free, and low-fat, which are all things that a lot of vegans appreciate.

How to Make Vegan Sausage Recipe

By virtue, this recipe is a bit complex, but as expected, I’ll do my best to explain in the simplest of ways. With your ingredients ready, all you have to do is follow the instructions I’ll share with you.

Ingredients for Making Vegan Sausage

Here are the ingredients you need to make this delicious vegan sausage at home.

  • 1 (15-oz) can of white beans, gives about 1½ cups
  • 1 cup of oats
  • 1 cup of thinly sliced cremini or button mushrooms
  • ½ cup of walnuts 
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 3 tablespoons of ground chia seeds + ¼ cup of water
  • 1 ½ tablespoons of soy sauce 
  • 1 tablespoon of tomato paste 
  • 2 teaspoons of Italian seasoning
  • 2 teaspoons of smoked paprika
  • 2 teaspoons of onion powder 
  • 1 teaspoon of salt 
  • 1 teaspoon of black pepper
  • ½ teaspoon of ground cumin
  • ¼ teaspoon of cayenne pepper.

Instructions for Making Vegan Sausage

Here are the step-by-step instructions on how to make the vegan sausage recipe at home.

Step 1: In a small bowl, add the ground chia seeds and mix with the ¼ cup of water and set aside to thicken.

Step 2: Pour the canned beans over a sieve, and rinse very well. Allow them to drain and pat them dry using a paper towel.

Step 3: Heat a skillet over medium heat, add the sliced mushrooms and soy sauce, and cook for about 4-5 minutes.

Step 4: In a food processor, add in the walnuts and oats, then pulse as we need them to be textured and not fine powdered.

Step 5: Now, add in all the other ingredients with the sautéed mushrooms to the food processor and pulse again until everything is just combined.

Step 6: Now, transfer the mixture to a bowl and place it in the freezer for 10 minutes.

Step 7: Take about ⅓ cup of the mixture and form it into a sausage with your hands. Repeat this step for the remaining mixture.

Step 8: Place the formed sausages on a large plate lined with parchment paper, then place them in the refrigerator for 30 minutes.

Step 9: Now, wrap each sausage in a tin foil with twists at each end like candy, then place in a steamer and steam for 30 minutes.

Step 10: Your vegan sausage is ready, and you can choose to eat it steamed like that or toss it onto the grill, or just fry it in a pan.

Notes

  • Don’t overblend, and the mixture should be firm to the touch. If sticky, add in a bit of flour and pulse till it’s mixed in.
  • If you have some leftover sausages, store them in an airtight container in the refrigerator for up to 5 days.
