Vegan Mac and Cheese Recipe

This Vegan Mac and Cheese recipe is simple to prepare, and it comes out tasting just as good while being healthier.

Ingredients
  

  • 16 Oz. Elbow macaroni pasta
  • 3 cups plain unsweetened full-fat coconut milk
  • 3 cups shredded vegan cheddar cheese
  • ¼ cup vegan butter
  • ¼ cup all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • breadcrumbs as toppings
  • extra vegan cheese as toppings

Method
 

  1. Preheat your oven to 400°F (or 200°C). Cook your macaroni according to the package instructions, then rinse and drain. Set aside in a covered bowl.
  2. In a pot over medium heat, melt the butter completely, then whisk in the flour until it forms a smooth paste.
  3. Add in the milk slowly whilst still whisking until it is mixed in properly. Allow to simmer until it thickens, but continue stirring to avoid burning.
  4. Add in the vegan cheese and keep stirring as this takes a little more time to melt. Now, season with the salt and pepper, to taste. Keep stirring until you get a thick, creamy, cheesy sauce.
  5. Add the cooked macaroni and toss until the sauce is evenly distributed. Transfer the mac and cheese mix to a 9 X 13” baking dish.
  6. Sprinkle some breadcrumbs and grated vegan cheese over the macaroni cheese.
  7. Bake in the preheated oven for 20 minutes, until the top is golden brown.
  8. Voila, your delicious vegan Mac and Cheese dish is ready. Allow to cool before serving.

Notes

  • You can use any other vegan milk, but make sure it is also plain and unsweetened. In case the alternative has a thin consistency, allow the sauce more time to thicken properly.
  • Although it is named Mac and Cheese, you can still use any other pasta like penne or shells, but NOT spaghetti!
  • If you have leftovers, you can store them in the refrigerator for up to 3 days and in the freezer for up to 3 months.
