Ingredients
  

  • 2 cups all-purpose flour
  • cup light brown sugar
  • ½ cup vegan butter
  • ¼ cup applesauce
  • ¼ cup oat milk or any other vegan milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups vegan chocolate chips

Method
 

  1. Preheat your oven to 350°C (or 180°C). Line a large baking sheet with parchment paper and set aside.
  2. Mix all the wet ingredients in a large bowl: light brown sugar, vegan butter, applesauce, oat milk, vanilla extract, and apple cider vinegar.
  3. In another bowl, whisk together all the dry ingredients: flour, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients, then mix them using a wooden spatula until just combined.
  5. Now, add in the chocolate chips and fold them in gently.
  6. Using a cookie scoop, take about 3 tablespoons of dough and set it on the prepared baking sheet. Repeat for others, but make sure there is space between each dough for spreading.
  7. Now, bake in the preheated oven for 12-15 minutes, or until the centers have set and the edges are golden.
  8. Allow the cookies to cool for about 15 minutes, then transfer to a cooling rack to keep on cooling.

Notes

  • When mixing, if the dough appears too sticky, add a little more flour, one tablespoon at a time; if the dough appears too dry, add a tablespoon of milk.
