Method
- Preheat your oven to 350°C (or 180°C). Line a large baking sheet with parchment paper and set aside.
- Mix all the wet ingredients in a large bowl: light brown sugar, vegan butter, applesauce, oat milk, vanilla extract, and apple cider vinegar.
- In another bowl, whisk together all the dry ingredients: flour, baking soda, and salt.
- Add the dry ingredients to the wet ingredients, then mix them using a wooden spatula until just combined.
- Now, add in the chocolate chips and fold them in gently.
- Using a cookie scoop, take about 3 tablespoons of dough and set it on the prepared baking sheet. Repeat for others, but make sure there is space between each dough for spreading.
- Now, bake in the preheated oven for 12-15 minutes, or until the centers have set and the edges are golden.
- Allow the cookies to cool for about 15 minutes, then transfer to a cooling rack to keep on cooling.

Notes
- When mixing, if the dough appears too sticky, add a little more flour, one tablespoon at a time; if the dough appears too dry, add a tablespoon of milk.
