Vegan Brownies Recipe

The vegan brownies are fudgy, chewy, and with a deep chocolatey flavor that I absolutely love.

Ingredients
  

  • 1 cup all-purpose flour
  • cups brown sugar
  • cup unsweetened cocoa powder
  • ½ cup vegan butter
  • ¼ cup unsweetened almond milk
  • 1 banana mashed till smooth
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup non-dairy chocolate chips

Method
 

  1. Preheat the oven to 400°F (or 200°C) and line a 7 x 11 pan with parchment paper.
  2. In a big bowl, add in the mashed banana, almond milk, vanilla extract, sugar, and vegan butter, mix until well combined.
  3. Now, in another bowl, add in all the dry ingredients: flour, cocoa powder, baking powder, salt, and whisk together.
  4. Add the dry ingredients to the wet ingredients, and mix until just combined. Afterwards, gently fold in half of the chocolate chips.
  5. Transfer the batter to the prepared pan and use a spatula to smooth out the top. Sprinkle the remaining chocolate chips over it.
  6. Bake in the preheated oven for 15-20 minutes until a toothpick comes out clean when inserted into the center. If it doesn't come out clean, bake for an additional 5-10 minutes.
  7. Remove from the oven, allow to cool in the pan for 15 minutes, then pull the brownies out, using the parchment paper, and place on a cooling rack for another 15-30 minutes. Slice, serve, and enjoy!

Notes

  • If you can't get almond milk, you can use any other plant-based milk, but make sure it is unsweetened and unflavored.
  • If you have leftovers, you can store the brownies in the refrigerator for a couple of days. I think they even taste better the day after.
