Method
- Preheat the oven to 400°F (or 200°C) and line a 7 x 11 pan with parchment paper.
- In a big bowl, add in the mashed banana, almond milk, vanilla extract, sugar, and vegan butter, mix until well combined.
- Now, in another bowl, add in all the dry ingredients: flour, cocoa powder, baking powder, salt, and whisk together.
- Add the dry ingredients to the wet ingredients, and mix until just combined. Afterwards, gently fold in half of the chocolate chips.
- Transfer the batter to the prepared pan and use a spatula to smooth out the top. Sprinkle the remaining chocolate chips over it.
- Bake in the preheated oven for 15-20 minutes until a toothpick comes out clean when inserted into the center. If it doesn't come out clean, bake for an additional 5-10 minutes.
- Remove from the oven, allow to cool in the pan for 15 minutes, then pull the brownies out, using the parchment paper, and place on a cooling rack for another 15-30 minutes. Slice, serve, and enjoy!

Notes
- If you can't get almond milk, you can use any other plant-based milk, but make sure it is unsweetened and unflavored.
- If you have leftovers, you can store the brownies in the refrigerator for a couple of days. I think they even taste better the day after.
