Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup mashed ripe bananas
  • cup granulated brown sugar
  • cup vegan butter melted
  • ¼ cup oat milk or any other plant-based milk
  • 5 tablespoons water
  • 2 tablespoons ground flaxseeds
  • 1 tablespoon lemon juice
  • ½ tablespoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon freshly ground
  • ¼ teaspoon nutmeg freshly ground
  • ½ cup non-dairy chocolate chips optional
  • ½ cup chopped walnuts optional

Method
 

  1. Preheat your oven to 350°F(or 180°C). Line an 8 1/2 x 4 1/2 inch pan with parchment paper and grease the inside of the pan to prevent sticking.
  2. In a small bowl, mix the ground flaxseeds with the water. Set aside to thicken.
  3. In a big bowl, add in the mashed banana, vegan butter, brown sugar, lemon juice, vanilla extract, flaxseed mix, and milk, and mix until well combined.
  4. In another bowl, whisk together the dry ingredients: flour, baking soda, cinnamon, nutmeg, and salt.
  5. Now, add the dry ingredients to the wet ingredients, and mix until just combined. Avoid overmixing.
  6. Gently fold in the chocolate chips and chopped walnuts.
  7. Transfer the batter to the prepared pan, and bake in the preheated oven for 45-55 minutes or until a toothpick comes out clean when inserted in the center.
  8. Allow the bread to cool in the pan for a couple of minutes, then remove and transfer to a wire rack to continue cooling for up to 30 minutes. Serve and enjoy!

Notes

  • When mixing the dry and wet ingredients, make sure not to overmix, as it is quite normal to still see lumps of banana after mixing them.
