Equipment

  • Food processor or high-speed blender
  • Spatula

Ingredients
  

  • 3 cups raw almonds unsalted
  • ¼ teaspoon salt optional
  • 1-2 teaspoons neutral oil (ex. avocado or coconut) this is optional for extra creaminess

Instructions
 

Roast the almonds

  • Preheat oven to 350°F (175°C). Spread almonds in a single layer on a baking sheet. Roast for 8 to10 minutes, stirring once, until lightly golden and fragrant. Let cool slightly.

Blend

  • Transfer warm almonds to a food processor. Blend for 2 to 3 minutes. The almonds will go through stages: chopped to crumbly to thick paste.

Scrape and continue

  • Stop occasionally to scrape down the sides. Continue blending for another 3 to 5 minutes until smooth and creamy.

Season

  • Add salt if using. For a smoother texture, drizzle in oil and blend until fully incorporated.

Store

  • Transfer to an airtight jar. Let cool completely before sealing.
