Boil veggies:
- In a saucepan, add diced potatoes and carrots. Cover with water and boil for 10–12 minutes, or until soft. Drain and let cool slightly.
Blend:
- Add boiled potatoes and carrots to a blender along with the soaked/boiled cashews, nutritional yeast, almond milk, olive oil, garlic powder, onion powder, turmeric, salt, and lemon juice. Blend until completely smooth and creamy.
Adjust and improve:
- Taste and adjust seasoning. Add more milk for a thinner sauce, more salt or lemon juice to boost flavor.
Serve warm:
- Transfer to a saucepan and gently heat through if needed before serving. Enjoy with pasta, tacos, steamed veggies, or nachos.
