Nachos Base
- 8 oz tortilla chips corn, vegan-friendly
- 1 cup canned black beans drained and rinsed
- 1 cup canned corn drained
- ½ cup red bell pepper diced
- ½ cup red onion finely chopped
- 1 cup vegan shredded cheese cheddar or Mexican-style
Seasoning
- 1 tsp olive oil
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp smoked paprika
- Salt and pepper to taste
Toppings (Optional but Recommended)
- ½ cup fresh salsa
- 1 ripe avocado diced or mashed
- ¼ cup sliced jalapeños

Season the Beans & Veggies
