For Soy Milk:
  • 2 cups dried soybeans
  • 8 cups water for blending
  • Additional water for soaking
For Coagulation:
  • 2 tsp nigari magnesium chloride, or
  • 2 tsp lemon juice or
  • tsp gypsum powder calcium sulfate
  • ¼ cup warm water to dissolve coagulant
Optional:
  • Salt to taste, for seasoning

Equipment

  • Large bowl
  • Blender
  • Cheesecloth or nut milk bag
  • Fine mesh strainer
  • Heavy-bottomed pot
  • Wooden spoon
  • Tofu mold or small rectangular container
  • Weight a can or jar works fine
  • Thermometer This is optional but helpful
