- 1 block 14 oz firm tofu pressed and cubed
- 1 tbsp olive oil or sesame oil for more flavor
- 1 medium onion diced
- 3 cloves garlic minced
- 1 inch fresh ginger grated
- 2 medium carrots sliced
- 1 cup sliced mushrooms shiitake or cremini
- 1 cup baby spinach
- 4 cups vegetable broth
- 1 tbsp soy sauce or tamari
- 1 tsp rice vinegar
- ½ tsp turmeric optional, for color & health
- Salt & pepper to taste
- 2 green onions chopped this is for garnish
- Fresh cilantro optional garnish
Add Broth & Seasoning
Pour in the vegetable broth, then add soy sauce, rice vinegar, turmeric, salt, and pepper. Bring to a gentle boil.
