For the Potatoes
- 1½ lbs potatoes Yukon gold or russet, peeled and diced small
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper to taste
For the Tacos
- 8 small corn tortillas
- 1 cup shredded red cabbage or lettuce
- ½ cup pico de gallo or diced tomatoes
- 1 avocado sliced or mashed
- Fresh cilantro chopped
- Lime wedges for serving
