For the dough (or use store-bought vegan pizza dough):
- 2 ½ cups all-purpose flour
- 1 tsp salt
- 1 tsp sugar
- 2 ¼ tsp active dry yeast 1 packet
- ¾ cup warm water
- 1 tbsp olive oil
For the toppings:
- 1 cup pizza sauce store-bought or homemade
- 1 cup vegan mozzarella shreds or cashew-based cheese
- 1-2 medium tomatoes thinly sliced
- Fresh basil leaves
- 1 tbsp olive oil
- ½ tsp dried oregano
- ¼ tsp crushed red pepper flakes optional
- Salt and pepper to your taste
Prepare the dough (if making from scratch):
In a small bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
In a large bowl, mix flour and salt. Add the yeast mixture and olive oil. Stir until it forms a dough.
Knead on a floured surface for about 8-10 minutes until smooth. Place in an oiled bowl, cover, and let rise for 1 hour or until doubled in size.
Assemble the pizza:
Roll out the dough into a 12-inch circle or rectangle. Transfer to a baking sheet or preheated stone.
Spread pizza sauce evenly over the dough. Sprinkle vegan mozzarella on top.
Add sliced tomatoes, drizzle olive oil, and season with oregano, salt, and pepper.
