Ingredients
  

  • 1 cup raw cashews soaked in hot water for 30 minutes
  • 3 tbsp nutritional yeast
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 garlic clove
  • 1 tsp apple cider vinegar
  • ½ tsp onion powder
  • 1 tsp salt adjust to taste
  • ½ cup water add more for a thinner consistency

Equipment

  • High-speed blender or food processor
  • Measuring cups and spoons
  • Small saucepan if you're warming the cheese
  • Airtight container for storage

Method
 

Soak Cashews:
  1. Place raw cashews in a bowl of hot water and let soak for 30 minutes. Drain and rinse.
Blend:
  1. In a high-speed blender, add cashews, nutritional yeast, lemon juice, olive oil, garlic, apple cider vinegar, onion powder, salt, and water. Blend until completely smooth and creamy.
Adjust:
  1. Taste and adjust seasoning. Add more water if you prefer a thinner consistency.
Optional Heat:
  1. For a warm cheese sauce, transfer to a small saucepan and heat on low, stirring until warm.
Serve:
  1. Use as a dip for veggies, spread on sandwiches, or drizzle over pasta.
