For the Pudding
- 2 cups unsweetened almond milk or oat milk
- ½ cup canned full-fat coconut milk
- ⅓ cup granulated sugar or coconut sugar
- 3 tablespoons cornstarch
- 1 teaspoon vanilla extract
- ⅛ teaspoon turmeric this is optional and it's for color
- Pinch of salt
For Assembly
- 3 ripe bananas sliced
- 1½ cups vegan vanilla wafers or vegan cookies
- Coconut whipped cream this is optional, for topping
Make the Pudding
In a medium saucepan, whisk together almond milk, coconut milk, sugar, cornstarch, salt, and turmeric until smooth.
Place over medium heat and cook, whisking constantly, until the mixture thickens (about 8 to 10 minutes).
Remove from heat and stir in vanilla extract.
Let the pudding cool slightly for 5 to 10 minutes.
Assemble
In a serving dish or individual cups, layer vegan cookies, banana slices, and pudding.
Repeat layers until ingredients are used, ending with pudding on top.
Cover and refrigerate for at least 2 hours to set and develop flavor.
