Ingredients

  • 4 slices of thick-cut bread day-old or slightly stale works best; sourdough, brioche-style, or white bread
  • 1 cup unsweetened plant-based milk almond, soy, oat, etc.
  • 2 tablespoons cornstarch for thickening
  • 2 tablespoons maple syrup or agave syrup
  • 1 tablespoon nutritional yeast optional, adds an "eggy" depth
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • teaspoon ground turmeric optional, for a light golden color
  • Pinch of salt
  • Vegan butter or neutral oil for greasing the pan

Equipment

  • Medium-sized mixing bowl
  • Whisk
  • Shallow dish wide enough for dipping bread slices
  • Non-stick skillet or frying pan
  • Spatula

Method

Prepare the Batter:
  1. In a mixing bowl, whisk together the plant-based milk, cornstarch, maple syrup, nutritional yeast (if using), vanilla extract, cinnamon, turmeric, and salt. Whisk until fully combined and the cornstarch has dissolved.
Preheat the Pan:
  1. Place your non-stick skillet over medium heat and add a little vegan butter or oil to coat the bottom.
Dip the Bread:
  1. Pour the batter into the shallow dish. Dip each slice of bread into the batter for about 5-10 seconds per side, ensuring it's well-coated but not overly soggy.
Cook the French Toast:
  1. Place the coated bread slices onto the heated skillet. Cook for 3-4 minutes per side, or until golden brown and slightly crisp on the outside.
Serve:
  1. Serve warm with your favorite toppings like fresh berries, maple syrup, powdered sugar, vegan whipped cream, or plant-based yogurt.
