That’s why I decided to share my special recipe on how I make vegan oatmeal cookies. They are soft in the center, a little crisp around the edges, but perfectly sweet in the manner that you’d expect.
The mix of rolled oats, brown sugar, and a hint of cinnamon gives these cookies that old-fashioned flavor you likely love. I use both applesauce and coconut milk to keep them soft and give them rich buttery taste respectively. The last time I served them to some of my non-vegan friends, they swore it was not vegan, none could tell these cookies were 100% vegan.

- Set to 350°F (175°C). Line your baking sheet with parchment paper.
- In a medium bowl, combine oats, flour, baking soda, baking powder, cinnamon, and salt. Stir well.
- In a large bowl, whisk together melted coconut oil, brown sugar, applesauce, and vanilla extract until smooth and creamy.
- Gradually add the dry mixture to the wet ingredients. Stir until a soft dough forms.
- Fold in chocolate chips, raisins, or nuts if using.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with your fingers or the back of a spoon.
- Bake for 10–12 minutes, or until the edges are golden brown.
- Let cookies rest on the sheet for 5 minutes, then transfer to a cooling rack.
