Easy Vegan Sour Cream Recipe You Might Need
This vegan sour cream recipe is creamy, smooth and sour the way anyone would love their sour cream. To top it all, it is super easy to make with very few ingredients.
This recipe came from a moment of curiosity. I was making tacos one night, and I really wanted that cool, creamy sour cream to balance the spice, but I didn’t have any on hand. I looked at the cashews sitting in my pantry and thought, “Well, let’s see what happens.” It turns out, what happened was magic. A few minutes later, I had the smoothest, richest sour cream that tasted really good and I would recommend this against anything out there.
The base of this recipe is soaked cashews, and that’s what gives it that thick, velvety texture. Cashews blend beautifully when they’re softened, so it’s worth taking the time to soak them first. Once they’re ready, all you need to do is blend them with a little lemon juice, apple cider vinegar, salt, and water. I like adding a bit of nutritional yeast for flavor, but that part’s totally optional. It just gives a tiny boost of tang that reminds me of traditional sour cream.
Let’s get to the actual recipe so you too can make yours own even customize it as you please.
