Ingredients
  

For the Pudding

  • 2 cups unsweetened almond milk or oat milk
  • ½ cup canned full-fat coconut milk
  • â…“ cup granulated sugar or coconut sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • â…› teaspoon turmeric this is optional and it's for color
  • Pinch of salt

For Assembly

  • 3 ripe bananas sliced
  • 1½ cups vegan vanilla wafers or vegan cookies
  • Coconut whipped cream this is optional, for topping

Instructions
 

Make the Pudding

  • In a medium saucepan, whisk together almond milk, coconut milk, sugar, cornstarch, salt, and turmeric until smooth.
  • Place over medium heat and cook, whisking constantly, until the mixture thickens (about 8 to 10 minutes).
  • Remove from heat and stir in vanilla extract.
  • Let the pudding cool slightly for 5 to 10 minutes.

Assemble

  • In a serving dish or individual cups, layer vegan cookies, banana slices, and pudding.
  • Repeat layers until ingredients are used, ending with pudding on top.
  • Cover and refrigerate for at least 2 hours to set and develop flavor.

Serve

  • Top with coconut whipped cream and extra banana slices if desired.
  • Serve chilled.
