Healthy Lentil Bread Recipe
First time I heard of and had a piece of lentil bread, I never actually believed it was indeed lentil bread because it was so good and the one I had was purely vegan without animal milk used in the recipe. How to make that healthy and really lovely vegan lentil bread at home. If you haven’t had lentil bread before, prepare to be blown away and if you have had it before but don’t really know how to make yours at home, then you’re at the right place at the right time.
Though lentil bread is not as popular as other major kinds of breads, and as a result, making it might sound like a daunting task, it is surprisingly simpler and easier to make than you imagine. It’s especially easy if you have the right recipe like this one. Red lentils are popularly the best choice because they soften easily and blend into a smooth consistency. Yellow lentils are also used but not as popular chosen as red lentils. You’ll start by washing and soaking the lentils for few hours. The reason for soaking is to soften things up and making blending easy and more importantly, it improves the texture of the bread after baking.
After soaking, you drain the lentils and add them to a blender along with water, a little oil, and your preferred seasonings. Salt is essential, and from there you can add garlic powder, dried herbs, or nutritional yeast if you want a more savory loaf. A leavening agent like baking powder helps the bread rise just enough so it does not feel too heavy.

Equipment
- Blender or food processor
- Mixing bowl
- Loaf pan (8 × 4 inch / 20 × 10 cm)
- Parchment paper or nonstick spray
- Spatula

Ingredients
- 1 cup dried red lentils rinsed and soaked for 3 hours
- ½ cup water
- 2 tablespoons olive oil or any neutral oil
- 1 tablespoon apple cider vinegar or lemon juice
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon garlic powder this is optional
- 1 teaspoon dried herbs rosemary, thyme, or oregano
- 2 tablespoons nutritional yeast optional, for savory flavor
Instructions
Preheat the oven
- Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.
Blend the batter:
- Drain the soaked lentils and add them to a blender with water, olive oil, and apple cider vinegar. Blend until completely smooth.
Mix dry ingredients:
- Add baking powder, baking soda, salt, garlic powder, herbs, and nutritional yeast to the blender. Blend briefly until combined.
Pour and smooth:
- Transfer the batter into the prepared loaf pan and smooth the top with a spatula.
Bake:
- Bake for 40 to 45 minutes, or until the top is firm and a toothpick inserted in the center comes out clean.
Cool:
- Let the bread cool in the pan for 10 minutes, then transfer to a rack to cool completely before slicing.
