Equipment
- Mixing bowls 1 large, 1 medium
- Fork or potato masher
- Whisk or spatula
- Measuring cups and spoons
- 8×8-inch (20×20 cm) baking pan
- Parchment paper or nonstick spray
Ingredients
- 2 ripe bananas mashed (about 1 cup)
- ½ cup brown sugar or coconut sugar
- ¼ cup neutral oil vegetable, sunflower, or melted coconut oil
- ¼ cup vegan milk almond, soy, or oat
- 1 teaspoon vanilla extract
- ¾ cup all-purpose flour
- ¼ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup vegan chocolate chips optional but recommended
- ¼ cup chopped walnuts or pecans optional
Instructions
Preheat and prepare the pan
- Preheat your oven to 175°C (350°F). Line an 8×8-inch baking pan with parchment paper, leaving a slight overhang on the sides to make removing the brownies easier later. Lightly grease if not using parchment.
Mash the bananas
- In a large mixing bowl, mash the ripe bananas using a fork until mostly smooth. A few small lumps are fine and will add moisture and texture to the brownies.
Mix the wet ingredients
- Add your brown sugar, oil, vegan milk, and vanilla extract to the mashed bananas. Whisk or stir well until the mixture looks glossy and evenly combined. This step helps dissolve the sugar and ensures even sweetness throughout the brownies.
Combine the dry ingredients
- In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Sifting helps prevent cocoa clumps and results in a smoother batter.
Make the batter
